my mom’s side of the family is incredibly Scandinavian (Swedish + Norweigian especially), and this recipe is a wintertime favorite from my grandma has made literally since i can remember! especially in the wintertime months. now my mom has been making it for the last few years because we are the only two in my immediate family who will eat it and share it together.
i literally joked to my mom when she made fruit soup around New Years “you know, instead of taking a stool softener after baby is born, can you just make me a batch of fruit soup?”
we laughed, it was beautiful.
until she brought me over a batch of fruit soup when i was 3 days postpartum, and it’s been my before bedtime snack treat to myself!!! enjoy from my family to yours ❤️
FRUKTSUPPE — NORWEGIAN FRUIT SOUP RECIPE
ingredients:
- 1/2 pound pitted prundes
- 1 cup raisins
- 1 orange
- 1 lemon
- 1/4 pound dried apricots
- 1 – 1 1/2 cup total: dried blueberries, dried cherries, craisins
- 4 tablespoons large pearl tapioca
- 3 apples
- 3/4 cup sugar
- 1 cinnamon stick
- 1 can tart cherries with liquid
directions:
- snip the prunes + apricots in half.
- slice the lemon and orange into thin slices without peeling.
- put the prunes, apricots, lemon, orange, raisins, other dried fruits, tapioca, sugar and cinnamon stick in a large pot like a Dutch oven.
- add just enough water to cover the fruit mixture + stir to dissolve the sugar.
- cover and let sit overnight.
- the next day, core + slice the apples, leaving the skin on.
- add apples to the pot, along with 2-3 cups of water.
- cook on the stovetop until the fruit is soft, about 30 minutes.
- add the canned cherries + the liquid last.
- simmer for about 5 minutes.
- let sit until ready to serve.
- can be served warm or cold.
